BEJU (Coconut & Cassava Biscuits)
What You Will Need:
- 8oz fresh cassava
- 4oz caster sugar
- 8oz grated coconut
How to make it:
- Grease a baking sheet at and preheat oven to 275 degrees.
- Peel and grate the cassava.
- Squeeze out excess any starch and moisture.
- Mix in the sugar and coconut.
- Form biscuits out of mixture and place on baking sheet.
- Bake until set, then turn over and continue baking until firm and brown.
- Cool and store in an air tight containers.
