BEJU (Coconut & Cassava Biscuits)

What You Will Need:

  • 8oz fresh cassava
  • 4oz caster sugar
  • 8oz grated coconut

How to make it:

  1. Grease a baking sheet at and preheat oven to 275 degrees.
  2. Peel and grate the cassava.
  3. Squeeze out excess any starch and moisture.
  4. Mix in the sugar and coconut.
  5. Form biscuits out of mixture and place on baking sheet.
  6. Bake until set, then turn over and continue baking until firm and brown.
  7. Cool and store in an air tight containers.
